Some of those noises I've never heard in a (UK) modem dialup sequence - what V. spec is the PowerBook modem to? (I only ever used V.90/V.92 devices with Hayes chipsets in). That said, I got some quite unusual sounds myself back in the day - one of my favourites was the gradual diminuendo of a tone from loudest to softest, I guess it must've been the remote modem calculating signal to noise ratio.
One of my favourite sounds from your clip is the bit at 0:29, that resonant fading tone is immense :D
