By request, first three minutes of http://www.freesound.org/samplesViewSingle.php?id=49801 (20080302.guadiamar.mid-side.flac) with original Mid/side encoding. That is, the left channel has the sounds captured by the middle mic (Sennheiser MKH60), and the right channel has the sound taken from the sides by figure-8 Sennheiser MKH30. Both mics were plugged into a Shure FP24 preamp, recorded with Edirol R09
As for the content, you'll listen to weird funny sounds produced by birds (male Coot calling, fighting/splashing around, Sand Martins, Swallows, Little Greb, Mallard). Sheep bleats in background.
