It can be tough indeed. When you are trying to record something you realise how much unrelated noise there is in the world.
I usually have found that about 75% into a flight people have calmed now a bit :)
If it's an international flight, when everyone is asleep works too.

This is better than anything I've got in an aircraft cabin. My recordings usually end up with a lot of people noise that interferes with the real sounds.
