This is the sound of onions cooking on a large steel pan over medium heat using a gas range. About 3 pounds of onions are in the early stage of caramelizing. The first half of the recording includes the sound of stirring the onions with a wooden spatula. The second half is just the sound of the onions cooking, without any stirring or other noise. Please see my other recordings if you'd like the sound of the onions cooking without any stirring.
This was recorded on a Sony PCM-A10 using the onboard microphones in an XY configuration about 30cm from the pan, aiming down toward the center of the pan at about 30 degrees. Processed in Logic Pro with a slight amount of EQ to tame the room noise.
